Jota de Paoay is one of the traditional dances of Paoay, Ilocos Norte. In one part of the dance, the folk song "Sabunganay" is sung as an accompaniment. The folk song and the dance originated from the time the Augustinian missionaries laid the cornerstone of the Paoay Catholic church in the 17th century. Since then, the day before Ash Wednesday is set aside for mardi-gras or "Guling-Guling".
Female dancers wear serpentina, a skirt which fits the figure and billows into a flare at the lower part. Worn over this is the tapis, an overskirt made of black embroidered lace. She wears a camisa with stiff sleeves and a triangular pañuelo, a scarf covering the back and the shoulders. She wears elegantly beaded slippers. Male dancers wear barong tagalog.
